Ingredients
Dry rice or quinoa: 1 cup
Diced carrot: 1 large
Diced pineapple: 1 cup
Diced onion: ½ cup
Full fat coconut milk: 1 can of 400ml
Juice of lime: 1 lime
Soya sauce or tamari sauce: 1 tablespoon
Sesame oil: 2 teaspoons
Coconut oil or olive oil: 1 tablespoon
Preparation
Take a pan, and put it on the stove. Add coconut milk and lime juice in it, then add rice, and bring it to boil. After it is cooked, cover with the lid, and let it simmer for forty minutes.
Take another pan, add oil, and put on the stove. Add diced onions in it, and fry for 2, 3 minutes until it changes the color of becomes translucent. Then, add diced carrot, and stir fry them until they are tender. Add the cooked rice mixture into the onion and carrot mixture. Heat the pan for 2 to 3 minutes. In the end, turn off the flame, and add pineapples to it.
For making wraps, take out the leftover fried rice from the refrigerator. Take a tortilla shell and one collard green leaf. Place the sheet over the tortilla shell, add the rice, and wrap it into a roll. Your wraps are ready to enjoy.
