Pre-workout breakfast cookies not only help you to enjoy your delicious breakfast but at the same time, it provides you instant energy that is helpful for your workout routine. 

Sometimes, all you need is a delicious cookie to satisfy your hunger. However, due to the fear of gaining weight, we try to avoid eating them. With simple and complex carbohydrates and good fats, these oatmeal cookies loaded with raisin cashew, and enriched with the healthy ingredients like maple syrup, oats, cashew butter, and coconut oil are the perfect treat for pre-workout breakfast. We are going to share the most delicious recipe here. 

Pre-workout breakfast cookies

Ingredients

Mashed bananas: 2

Cashew butter: ½ cup

Melted coconut oil: 2 tablespoons

Vanilla essence: 1 tablespoon

Maple syrup: 1 tablespoon

Lemon zest and juice: ¼ cup

Ground oats or gluten-free flour: 1 cup

Oats: 1 and ½ cup

Baking soda: 1 teaspoon

Cinnamon: ½ teaspoon

Salt: ½ teaspoon

Cashew chopped: ¼ cup

Raisins: 1/3 cup

Preparation

Before starting the cooking procedure, pre-heat the oven to 350 degrees F, and combine parchment paper and cookie sheet.

 The second step involves the mixing of wet materials. The best option is to choose a food processor. However, if you don’t have a food processor, you can mix all the ingredients with your hands, but while doing so, you should take notice that all the ingredients are combined well. In this recipe, we will be sharing the food processor method for making the mixture. 

Take a food processor, and add all the wet ingredients in it. These ingredients involve banana, cashew butter, vanilla extract, maple syrup, coconut oil, lemon zest, and juice. After adding all the ingredients in a food processor, please turn it on to combine all the ingredients well.

On the other side, take a bowl, and add all the dry ingredients in it. The dry ingredients involve ground oats or gluten-free flour, oats, raisins, baking soda, cinnamon, salt, and chopped cashew. Combine them well, and then add the mixture of wet ingredients into the bowl. With the help of a spatula, mix all the dry and wet ingredients well, and if you find the batter a bit runny, place it in the refrigerator for 20 minutes for the setting.
